Diploma in Culinary Arts

The 6-month Diploma in Culinary Arts is accredited by the American Culinary Federation Education Foundation (ACEF). Graduates of the program will receive automatic ACF CERTIFIED CULINARIAN (C.C.) certification.

The Diploma in Culinary Arts (DCA) program is a 6-month intensive program accredited by TESDA (Technical Education and Skills Development Authority) that allows graduates to earn a Cookery  NC ll (National Certification Level 11) qualification. This qualification attests to the graduate’s competence to assume any of the following entry level positions in the industry: Commis 1, 2, and 3, Pastry Cook, Hot-Kitchen Cook, Pantry Worker, Cold-Kitchen Cook/Garde Manger and Saucier.

Through instructive demonstrations and intensive hands on training, complemented by lectures on theories, students are equipped with the fundamental skills and techniques on various cooking methods, including international cuisine, i.e. Asian, European, and American. Students are honed in the classroom laboratory for four months, after which they undergo two months of internship training in the actual hospitality workplace, where they apply the knowledge and skills gained in class, enhance their culinary skills and gain actual industry experience in the hospitality workplace.  All AHA Phil courses are designed to teach and train you in the culinary arts thru a tri-level approach of lecture, demo and hands-on kitchen work:

  • lectures are practical and comprehensive
  • demos are conducted in a theater-style room
  • hands-on cooking in well-equipped kitchen stations
  • limited number of students per cooking station for conducive learning

Complete program tuition is Php 278,500.00.

Students enrolled in the 6-month Culinary Arts – Commercial Cooking  NC ll can opt to undergo a 3-month international PAID work experience in the USA with international partner hotels of AHA USA. Additional cost for the program fee, airfare and health insurance apply.

The Diploma in Culinary Entrepreneurship (DCE) is for those who aim to become chef-entrepreneurs. This is an 8- month program which requires completion of the 6-month Commercial Cooking NC - II (Culinary Arts)  for which a student earns the TESDA NC ll recognition, plus two more months of study where students gain managerial and business competencies through courses on marketing, conducting feasibility studies, preparation of a business plan, catering/banquet management, purchasing and control.

US Certified Culinarian

Duration: 7 Months

The 7-month U.S. Certified Culinarian Program  is a perfect program for those who have the passion to learn culinary arts the professional way, but do not have the luxury of  time to enroll in a full-time program that requires 4-5 days a week of classes during the day.  This class holds double sessions every Saturday, from 8-4PM.

This program follows the world-class American Culinary Federation Education Foundation accredited  culinary training of AHA Philippines, and the TESDA  NC II Cookery.

The uniqueness of the program lies in its approach to culinary training that gives  weight to the internship hours  that students will render in the industry.  The cooking techniques, methods and world cuisines that students will learn in the AHA classroom and kitchen laboratory will be reinforced in the actual culinary training in restaurants and hotels.  Thus, 300 hours of internship training is the minimum requirement, which students can start working with after finishing every module of classroom/kitchen laboratory at AHA.  Students have an option to do internship in the U.S., Malaysia, and Australia.  They are also qualified to the step-up program of AHA with the Florence University of the Arts in Italy, either for the 4-week Italian Cookery and Restaurant Training or the Master in Culinary Arts (please refer to the Joint Program page).

This program is perfect for the following:

  1.  those who have  regular day job during the week and can only attend culinary classes every Saturday and do internship after office hours;
  2. professionally employed in the kitchen but want to earn a certificate or diploma; and
  3. hobbyists, culinary enthusiasts, and entrepreneurs.

The program is divided into 6 modules, and students may even  have the option to do one module at a time depending on time availability and budgetary constraints.

The Associate  in International Culinary Arts  is a 1 ½ – year program that provides students with a multifaceted education and training. This program allows students to acquire hands-on competencies in culinary arts, a well rounded liberal arts foundation through a balanced combination of general education courses, honing in business and a strong foundation on related hospitality management courses. This program is capped by a multicultural international training experience in the hospitality workplace, through a 6-month international internship in AHA partner hotels in the United States.The Associate’s Degree in International Culinary Arts is accredited by the American Culinary Federation Education Foundation (ACEF). Graduates of the program will receive automatic ACF CERTIFIED CULINARIAN (C.C.) certification.

THE KEY FEATURES OF THE ASSOCIATE IN INTERNATIONAL CULINARY ARTS PROGRAM ARE:

Wholistic Training & Development
Students undergo intensive training in culinary arts, as well as academic and life preparations through general education and professional courses in the field of hotel management and business. This gives graduates the option to continue their studies towards a bachelor’s degree in a related field, such as hotel and restaurant management, or entrepreneurship.
International Internship Training

International Servsafe Certification

Joint Program with the Florence University of the Arts

COOK UNDER THE TUSCAN SUN!

AHA Philippines and the Florence University of the Arts  offer the FIRST and ONLY JOINT INTERNATIONAL MASTER PROGRAM in CULINARY ARTS in the Philippines! The 10-month Master in International Culinary Arts is a unique step-up program that combines AHA Philippines’ American Culinary Federation (ACF) certified culinary program with master class training from one of the leading Italian culinary institutions, Culinary Institute of Florence – FUA.  The program enable students to learn advanced techniques in  Italian cooking, molecular gastronomy, Italian pastry, wine studies,  and experience more than 300 hours of restaurant training.

The step-up 10-month program starts with the 6-month Diploma in Culinary Arts or the 7-month U.S. Certified Culinarian at AHA Philippines and then proceed to the Flounce University of the Arts for the 4-month intensive culinary, baking and wine courses plus restaurant training.    The student will receive an AHA Diploma for the local basic program  and another Master Diploma from both Florence University of the Arts and AHA Philippines.

For those who want  shorter program, AHA- FUA offers the 4-week Italian Cuisine course plus Restaurant Training  to students who are in the AHA Diploma or U.S. Certified Culinarian track. This program is combines lecture, laboratory and 100 hours of restaurant training.   A certificate from the Florence University of the Arts is given to students who complete the course.

Since 2010, more than 100 AHA students have enrolled in this special program specifically designed for AHA Philippines and experienced first-hand European cooking at the heart of Tuscan cooking – Florence. Students lived like local Florentines, went to market, toured wineries, learned traditional and professional way of Italian cooking, and most importantly, immersed themselves in the culinary richness of Italian gastronomy.
